Different Markets require different Products and our evaluation process recognises this.
A Crisp Crust is not easy to achieve in a moist product, presented in packaging, designed to have a longer shelf life.
Eccles Cakes are made in sizes which allow target prices to be achieved and this is also taken into account. Size is not everything.
For example an appropriate quantity of correctly prepared fruit should be “a given” in every size.
The Categories are not fixed and can evolve over time. It is possible for one entrant to be in more than one category.
For 2017 the categories will be
Craft Baker shall be a cake presented
unwrapped
Manufacturer shall be a cake presented in a
sealed wrapping
Grocery Chain this will be one of the Large
Grocers. The Cakes may
be wrapped or unwrapped
We regard a Craft Baker as a person with a single bake house (with or without a shop). They may sell some of their output to other outlets but not the majority.
The next stage up is the Manufacturer. This can be a huge firm or a slightly larger version of the Craft Baker. The key marker is that they sell their produce packaged
The Grocery Chain can either bake their own or stock a Manufacturers wares. These can be packaged or offered unwrapped – probably pack it yourself these days!!
