Tests and Testing

One of our most crucial activities is the Audit Visits we make to sample the Eccles Cakes a baker is offering.

We make these visits unannounced and do not identify ourselves

The visits are accross the UK without a pattern

We carry out a rigourous set of tests and produce a report

These Reports are accessible to:

                                                   Friends of the Eccles Cake

                                                   Registered Bakers

                                                   Corporate Friends

The cake selected will be the most attractive offered

The Eccles Cake is tested within 24 hours of collection and usually much sooner.

Its dimensions are measured and it is weighed

It is cut along its longest dimension

It is balanced on edge and viewed to assess its structure

The filling is extracted and weighed. Its consistency is examined

The texture of the upper crust is examined

The qualities of the base are examined

Part of the cake are eaten to assess taste and texture

The results are recorded
